Years and years ago, the united irishmen (rebels) would march across the countryside and they used to have barley oats in their pockets for something to eat, you see. When they were killed in battle and buried, a year later a patch of barley would grow where they lay in unmarked graves. So the story goes that if you see a patch of barley in the Irish countryside that looks out of place its a rebel grave. The wind that shakes it is a metaphor for the renewed rebellious spirit
